:  a test for determining the degree of unsaturation of a fatty oil by observing the rise in temperature produced when concentrated sulfuric acid is added to the oil

Biographical Note for MAUMENé TEST

Mau·me· \mō-mə-nā\ Edmé Jules (1818–1891), French chemist. A professor of chemistry, Maumené wrote several general textbooks on chemistry, a number of full-length works on fermentation, wine, and winemaking, and many essays on hydrates and manganese. In 1850 he developed a test to detect the presence of sugar in various liquids.
